The house is beautiful. Have you considered making your own renders; clay sand manure, lime wash ect? Benefits being permeability/breathability and of course the aesthetics. The staircase is amazing.
Those terraces look ready to go! I imagine you’ve got many different microclimates throughout the land, particularly with all the radiant heat those rocks will provide.

Looking forward to the day you get goats and no longer have to do the clearing. Looked after goats as a kid, and they’re amazingly good at escaping. I used to walk my goat to the local shops.
I myself am looking at ducks this summer. Muscovy ducks specifically. Quiet and all, independent foragers, larger bird…kill the males. The ducks need a guard, so that’ll require a bloody alpaca, and perhaps if the alpaca is fat and lazy, and not too territorial, then bring in the goose.
